I have only one comment on Flaxseed.
Flaxseed Oil is great stuff, but must be used in moderation. One, 1/2 tsp a day is all you need to provide Omega 3 fatty acids. Flaxseed, like Soy, contains phyto-estrogens which mimic estrogen in the human body. Too much estrogen has been linked with breast cancer in humans. (males too) Persons with estrogen sensitive tumors or a history of estrogen sensitive tumors, should use care in consuming plant derived estrogens. The study done stating that Soy is protective against cancer, was a short six week clinical trial. In my opinion, six weeks isn’t enough time to determine long term effects.
When I make salad dressings, I combine Extra Virgin Olive Oil with Flax. A scant tablespoon of Flaxseed Oil, to a 1/2 cup of Olive Oil, is enough to put Omega 3’s and Omega 6’s into balance. BTW, I’ve come up with a recipe that is pretty close to Whishbone Italian Dressing, without all the noxious junk like corn sweeteners or emulsifiers. If anyone is interested, I will post it.
When buying Flaxseed Oil, it is wise to spend the money for the best quality you can afford. Buy it in a dark, opaque bottle, out of a refrigerated case to insure freshness and quality This information comes from Sally Fallon, and the Weston A. Price foundation.

Don’t forget cod liver oil and liver. Those are probably the most important superfoods you can eat.

There are many superfoods and I was simply naming five of them (not the top 5). Cod Liver is excellent my family & I take it regularly. Their has been debate about livers benefits and I don’t know a lot of people who like it, so I tend to leave that one alone. Some say since liver is a detoxing organ that acts like a trap or filter it would be like eating highly concentrated toxins.
Cat, please share you Itailan dressing recipe I would love it and I am sure alot of others would also.

Christie, here it is. If you like dressings a little bit more flavorful you can increase the herbs by a 1/4 tsp I suppose. I like it the way it is and it had the seal of approval from my picky dressing eater.
Better than WishBone Italian
1/2 a large Shallot
5 large cloves of Garlic
1- 2″x 2-1/2″ inch chunk of Red Bell Pepper
2 tsp of Rapadura
1 tsp of dried Basil
1/2 tsp of dried Orgeano
1/2 tsp of dried Tarragon
1/2 tsp of Sea Salt or to taste
20 turns on my grinder of Black Pepper. So to your preference.
1 Cup EVOO
1 Tblsp of Stone Ground Mustard
2 Tblsp Flax Seed Oil
4 Tblsp Raw Apple Cider Vinegar
Peel shallot and garlic chop coarsely, dice red bell pepper. Take all vegetables plus the dry ingredients and mince finely on a wooden cutting board. (or food processor.) Wisk together some of the EVOO with the mustard to emulsify the oils. Place minced mixture into a clean 1/2 pint jar and add liquid ingredients. Allow mixture set out overnight to bring the flavors together. The dry ingredients should soak up most of the vinegar leaving a mild vinegar taste. Actually the Original is more vinegar tasting.
